  • 1 package cherry tomatoes
  • 3 garlic cloves, minced
  • 1/2 tsp cumin
  • 1 tsp oregano or 2 sprigs fresh oregano
  • Zest of half a lemon
  • 1 tbsp lemon juice
  • 3 tbsp high-quality olive oil
  • Garlic, dried oregano, dill, parsley
  • Olive oil
  • Salt and pepper

  1. Heat olive oil in a pan on medium-high heat.
  2. Season the Bronzini with salt and pepper, then cook skin side down until crispy (about 4 minutes).
  3. Flip the Bronzini and cook for another 3 minutes until opaque.
  4. Prepare broiled tomatoes by mixing cherry tomatoes, olive oil, minced garlic, cumin, oregano, and lemon zest. Pierce tomatoes and broil or sauté for 15-20 minutes.
  5. Make the ledolemono sauce by mixing lemon juice and olive oil, optionally adding garlic, oregano, dill, or parsley.
  6. Plate as desired, adding arugula to the tomatoes and drizzling the sauce on top. Enjoy!
