How to Make Shrimp & Swordfish Watermelon Skewers

Ingredients

1 tray Colossal Shrimp
1 tray Wild Swordfish
1/2 watermelon
1 red onion
1 Tbsp. Chili Powder
1/2 tsp Cayen (optional)
2 Lemons or Limes
Garlic Powder
Onion Powder
Oive Oil
Beer(optional)
Kosher Salt & Pepper

Ingredients

1 tray Colossal Shrimp
1 tray Wild Swordfish
1/2 watermelon
1 red onion
1 Tbsp. Chili Powder
1/2 tsp Cayenne (optional)
2 Lemons or Limes
Garlic Powder
Onion Powder
Olive Oil
Beer(optional)
Kosher Salt & Pepper

Directions

  1. Soak wooden skewers in water or beer (~30 mins or longer)
  2. Cut the Swordfish into 2 inch cubes
  3. Cut the Watermelon into 2 inch triangles or cubes
  4. Cut the Onion into quarters and pull apart
  5. Cut the lemon or limes into thick slices
  6. Place the shrimp, watermelon, swordfish, lemon & onion in a tray large enough to fit the skewers
  7. Season seafood mix with salt and pepper
  8. In a bowl whisk the olive oil, chili powder, garlic powder and Optional (cayenne, sriracha, beer)
  9. Skewer 2 or 3 watermelon, onions, swordfish and shrimps
  10. Place back in tray with lemons, poor mixture over the skewers and marinate for at least one hour
  11. Grill Skewers and lemons/limes
  12. Serve with rice or slaw alongside the grilled lemons for a great taste and presentation
